My Chili Recipe

Making a pot of chili is a great way to stay warm on a cold winter night. My chili is extremely easy and a bit different from the traditional. I don't add hot peppers or a lot of spices. It's very simple, like the rest of my cooking, but it has been a big hit around my house.

I tend to eye measurements, so adjust to taste. The recipe below makes about 4 servings, but I have doubled and even tripled it for larger groups.

Ingredients:
1.25 lean ground beef (I use 96% fat free)
1 15 oz. can black beans, drained
1 16 oz.can pinto beans, drained
2 14.5 oz. cans petite diced tomatoes, no salt added, mostly drained
1 16 oz. bag frozen mixed pepper strips (green, red, yellow - or use 1 fresh of each color cut into strips)
2 teaspoons chili powder
1 teaspoon cayenne pepper
1 teaspoon coarse ground black pepper
1 teaspoon minced garlic

Directions:
- Brown ground beef in a skillet
- Put all remaining ingredients in a large pot and bring to a boil
- Add drained browned beef to the rest, stir well
- Reduce heat and simmer for about 45 minutes or until thickened, stirring occasionally

And that's it. The longer it simmers the better the flavors mingle. Using frozen peppers and canned tomatoes makes it really simple when you don't have a lot of prep time and it's easy to substitute fresh when time allows.

Christmas with Dr. Horrible


Yes, it's here. Dr. Horrible was released on DVD in time for Santa to leave it under my tree. It's even better on the big(ger) screen tv, than it was on my mini-big screen laptop. And my unexpected crush on NPH has been renewed - man, can that guy sing!

I just finished watching Commentary! The Musical for the second time (okay, third for some parts) and there's still a grin stretched across my face that I expect to last for the better part of the day. If you haven't seen it, it is a commentary that runs over Dr. Horrible, but instead of speaking, it is another musical. (Genius!)

I can't decide if my favorite song from Commentary! is Zack's or Joss'. I've gotta love Joss' Pick Apart song, and not just because it's Joss - well, partly because it's Joss - but because it's so true. 'Pick pick pick, what's the process in your head?' But 'Zack is Doin' Us a Favor'-- Hilarious, couldn't stop laughing, had to replay it three times funny!

Then, there are the behind the scenes featurettes. One on the movie, one on the music, and one on fan response. And of course, the Evil League of Evil video applications (created by fans). The first one had me laughing out loud, and the puppet one is completely deranged! (in a good way... I think)

If you're a Dr. Horrible fan, get the DVD. It's well worth the $10.50 at Amazon - which is apparently fifty cents more than the cost of a solo.

And a Happy New Year

It's been a busy year - as usual!

The boys graduated from elementary and middle school last spring and have each moved on to new schools for 6th and 9th grades. Brian is enjoying the challenge of high school and Michael is happy to have moved on to middle school. They are both taking all honors classes and Michael is taking Pre-Algebra as well (1-2 years early).

Brian is still playing the trumpet and is first chair in the school's symphonic band. He has recently started piano lessons as well. (Nope, I'm not teaching him myself.) Michael has also started band this year and is learning to play the clarinet.

Peter and I are keeping busy with work and home projects. The bathroom remodel that was originally planned for the summer was put off until October, then had delays and complications which dragged it out for two months. The work was finished yesterday - except for the painting which is scheduled for next week. (pictures will follow)

I cannot understand the opposition to gay marriage. I have heard the arguments and every one of them seem to be based on religious doctrine, fear, or hatred. Legal decisions should be based on fact and logic, not on emotions. I have not heard one argument that makes any kind of logical sense to me.

Bathroom Remodel - In Progress

It started with some loose shower tiles... They had to be replaced so it seemed time to change all the tile, and the old vanity, faucets, tub... By the end, the whole bathroom was gutted and replaced.

And now, the bathroom remodel that began in October is finally coming to an end! Two months for a bathroom remodel? Yep, and this venetian glass (pictured, click to enlarge) - which finally arrived yesterday - was behind all the delays.

The first delay came on the morning the contractor came to start work. The venetian glass, which was supposed to take 2 weeks to get here, still hadn't arrived and would be another 4 weeks. Apparently the US distributor was out and had to wait for a new shipment from Italy. We delayed two weeks, but then had the contractor start the demolition so he'd be ready to start when it came in.

The day finally came to pick up the glass and we found out it was delayed another 4 weeks!! I tried to find a different accent tile, but we had planned everything around this glass and nothing else looked as good. Our contractor finished as much work as he could do without the glass, but then the project had to be put on hold.

Last week, the glass was due (again). The tile did come in, but it was broken! The glass is a mesh of ~1 inch tiles that we are going to cut into 3x3 diamonds to use as accents. We only needed 3 sheets of tile and every one of them had crushed or broken off glass!

Luckily, they were able to replace it without sending to Italy. It pushed the work back by another 3 days, which led to rescheduling the painters, but at least the glass is finally here and the project can get back under way!

My contractor was able to finish pretty much everything else during the delay, so once the last of the tile is in, the bathroom will be functional. The painters should be here right after Christmas and I hope to be posting before and after pics by New Years Day.

And the venetian glass is so pretty! :-)

I Am, Therefore I Think?

I've been on a philosophical kick lately, mainly existential. I'm wading through Being and Nothingness now and probably will be for some time. It's a weighty read, not only because of the special terminology and constant references to other philosopher's works (some familiar, others not so much), but because it sends my mind spinning in different directions (which may or may not be correct interpretations of the text).

Take Sartre's fundamental position of the pre-reflective cogito as the primary consciousness. That is an idea I've wondered about for a long time (though not in those words). Descartes may have said "I think, therefore I am", but who is the I having the thought?

The way I understand it, Descartes' cogito is based on the recognition of thought about oneself, i.e. if I doubt my existence, I must exist to be able to have that doubt. However, that is using an awareness of the thought (or doubt) to prove self-existence. So what is that awareness?

This is the thought behind Sartre's pre-reflective cogito. In other words, there are two things happening within the thinking behind "I think, therefore I am". While the awareness of the thought is the I (or Ego), the thought itself is the actual primary consciousness (pre-reflective cogito) and happens idependent of an I.

As I type, there is consciousness of the computer in front of me (pre-reflective). I can experience the computer through my senses, such as sight and touch. However, that consciousness of the computer has nothing to do with I or me until I reflect on my own awareness of the computer. It is only when I become conscious of my own awareness of the computer (reflective) that I comes into being.

So what does that matter? Well, for one, a pre-reflective cogito creates an argument against solipsism (the idea that only one's own self can be proven to exist). It does this by defining the I (or Ego) as an object instead of as the subject. Therefore, the pre-reflective cogito is conscious of the Ego in the same way that it is conscious of other objects (e.g. the computer, a chair, a tree).

In George Orwell's 1984 (one of my all time favorite books), the protagonist, Winston, is ultimately struggling against solipsism. The Party has gained complete power over the people by distorting reality and enforcing belief in whatever reality they dictate. To hold these beliefs, one must practice doublethink, which is the ability to believe two contradictory truths at the same time. Those who have thoughts that go against the party are arrested for thoughtcrime.

As O'Brien tells Winston, "We control matter because we control the mind. Reality is inside the skull." (Though O'Brien denies that this is solipsism, but rather collective solipsism which he asserts is a different thing.)

During Winston's reeducation, we see how the concept of reality, and what constitutes reality, can become a slippery subject, especially as Winston struggles to understand O'Brien's actual experiences (or thoughts) as opposed to his own. He can not be certain whether O'Brien is lying to him or whether he actually believes the contradictory truths that he asserts. That is the idea - the questioning of reality as experienced outside of his own mind - that Winston cannot overcome.

But, back to the question of why any of this matters. Maybe it doesn't. Maybe it's all pointless speculation. Or maybe it means everything and is a glimpse at the "truth" behind all of our perceptions.

For me, these are just the thoughts that rattle around in my brain as I go about my day.
